This is for my cousin, really. She has a cooking blog and has been urging me to do this. She really loves having someone with my expertise in the family. HA. The first thing she tells people she introduces me to is that I study meat science. And the typical reaction is shock. I'm used to it now.
Anyway, this is a blog about meat. I'll think of something to write about specific next time, but if anyone has any questions, send them to me and I will post an answer.
